Carboxymethyl cellulose (CMC) is a water-soluble cellulose derivative widely used as a thickener, stabilizer, binder, and viscosity modifier in food, pharmaceutical, cosmetic, and industrial applications.

Chemical Structure and Properties

CMC is derived from cellulose, a natural polymer of D-glucose units linked by β-1,4-glycosidic bonds, with carboxymethyl groups (-CH₂-COOH) attached to some hydroxyl groups of the glucose monomers. This modification makes CMC water-soluble, unlike natural cellulose, and imparts anionic, hygroscopic, and chemically reactive properties. It is commonly used in its sodium salt form (sodium carboxymethyl cellulose), which enhances solubility and stability in aqueous solutions. The degree of substitution and polymer chain length influence its viscosity, solubility, and gel-forming ability.

Synthesis

CMC is synthesized by reacting cellulose with chloroacetic acid in an alkaline medium, producing a mixture of approximately 60% CMC and 40% salts (sodium chloride and sodium glycolate). Further purification removes salts for food and pharmaceutical applications, while semi-purified grades are used in paper restoration and industrial applications. Cellulose sources include cotton, wood pulp, and various plant residues such as sugarcane bagasse, banana pseudo-stem, corn stalks, and textile waste.
