VIVID Mono- and Diglycerides GMS4082 is a high-efficiency water-soluble emulsifier designed for food industry applications. Soluble in warm water above 55°C, it facilitates easy mixing with other ingredients and effectively maintains gas retention.

Applications
Mono- and Diglycerides GMS4082 is used in milk drinks, protein beverages, ice cream, cake gels, margarine, and non-dairy creamers. Particularly effective in water-soluble emulsion applications requiring solubility above 55°C.
Recommended Dosage
  • Milk drinks: 0.12%-0.15% of total products above 55°C with stirring and homogenization
  • Protein beverage: 0.05%-0.15% of total products above 55°C with stirring and homogenization
  • Ice cream: 0.2-0.3% of total products above 55°C water
  • Cake gel: 10%-20% of total products
  • Margarine: 0.3%-0.5% by weight of fats & oils at 58°C-65°C
  • Non-dairy creamer: 1.0%-1.5% of total material melted with fats & oils above 58°C

Milk Drinks & Protein Beverages: Provides emulsifying effect for dairy fat, prevents delamination and sedimentation, delivers smooth mouthfeel.
Ice Cream: Enlarges volume and increases bulking rate, shortens whipping time, prevents thick ice crystal formation, improves mouthfeel and creamy texture, enhances shape retention.
Cake Gel: Adjusts α-crystal monoglycerides, increases baking bulking rate, controls paste texture.
Margarine: Adjusts oil crystal structure, prevents water dispersion.
Non-Dairy Creamer: Creates uniform fat globule size distribution, improves whitening effect, ensures good water solubility, enlarges whipping cream volume, shortens whipping time.
