How Vacuum Cooling Technology Works
After harvesting and packaging, products are placed on pallets and loaded into a vacuum-tight chamber. The equipment reduces pressure inside the vessel using vacuum pumps, reaching the "flash point" where moisture and heat are removed as water vapor. Lower pressure decreases water's boiling point, enabling rapid temperature reduction until the desired cooling level is achieved.
Water vapor is efficiently removed by drawing it past refrigeration coils that condense it back into water. This dual-system approach achieves faster cooling than any other post-harvest technique.

Designed to accommodate vegetable pallets, with chamber size determined by pallet quantity and dimensions, which also dictates the number of vacuum pumps required.
