This technology can reduce product temperature from field conditions to approximately 2°C within just 15-20 minutes, ensuring optimal quality while enabling efficient logistics processing for large quantities.
How Vacuum Cooling Works
The process involves three key steps:
- Vaporizing moisture from within the product
- Removing energy in the form of heat from fresh produce
- Equalizing surface and core temperatures throughout the product
