Common machines and processes for apple sauce production lines
Raw material pretreatment
Cleaning and sorting: After the apples are cleaned with high-pressure bubbles, rotten fruits and impurities are removed by a roller sorter.
Peeling and core removal: Mechanical knives remove the cores and stems, and precook and soften the flesh (screw conveying + steam heating).
Crushing and pulping
Hot crushing: The double-shaft crusher cuts the apples into pieces and heats to inactivate enzymes to reduce browning reactions.
Step pulping: The double-channel pulper separates the fiber and pulp, and the screen gap is gradually reduced to 0.6mm.
Concentration and blending
Vacuum concentration: The pulp evaporates water to 68% solids in a double-effect concentration tank, and sugar, citric acid and other auxiliary materials are added simultaneously.
End point control: A refractometer is used to monitor the concentration in real time, and the steam volume and vacuum degree are automatically adjusted.
Sterilization and filling
UHT sterilization: The sauce is quickly heated to 95℃ by a tubular sterilizer, and then enters the sterile buffer tank after cooling. Aseptic filling: The fully automatic filling line completes quantitative filling and sealing, and the filling temperature is adjustable. Packaging and quality inspection
Capping and sealing: The vacuum capping machine ensures sealing, and the torque range is 0.8-1.2N·m. Foreign matter detection: After X-ray detection, the finished product is labeled, packed and put into storage
