Dough is placed into baking trays and transported to the automatic final proofing room. After proofing, dough pieces can be decorated with toppings or decorative cutting before baking. The system utilizes either gas-proportional controlled direct heated tunnel ovens or air circulation type indirect heated tunnel ovens. Baked products are cooled via spiral cooler and can be split and filled with cream or jam before packaging. Empty pans return through pan cooling tunnel to restart the cycle.
