Product Description
Food is placed in tray or on a trolley’s tray, next pushed into the freezer. In the process of temperature control, LN2 is directly injected into the freezer: nitrogen evaporation. When food is cooled or frozen for a few minutes, cold gases take heat away from the food. Liquid nitrogen (LIN) is used as the refrigerant, and the gas entering the quick-freezing machine is adjusted by the calibrated solenoid valve to ensure that the cooling capacity is used efficiently. Because of the low temperature in the freezer, it takes only a tiny amount of water to saturate the air: during the freezing process, the food barely dries out, which means it retains its weight and attractive appearance.
