Meat free alternative soy peptone nitrogen source suitable for industrial fermentation

Soy peptone is an enzymatic hydrolyzate of soybean meal designed as a nitrogen source for industrial fermentation. Naturally occurring polyphenols in soybeans may be potential inhibitors of certain bacterial strains.
