Industrial fish peptone is an excellent matrix for the production of biomass in solid and immersed fermentation. The maximum growth rate of several microorganisms is two to three times higher than that of microorganisms growing on beef (bacto) peptones, and the final biomass concentration is almost twice that of those grown on beef peptones. The production of secondary metabolites produced on beef peptones in non-optimized medium does not increase the production of secondary metabolites. Fish peptone has broad potential as a matrix for biomass production.
