Cellulase
Cellulase is extracted and refined by deep fermentation of trichodermia. Because it is rich in endoglucanase, exoglucanase and β-glucosidase and other enzyme systems, it acts on β-1, 4 bonds from the inside of the molecule to degrade cellulose, and produces cellobiose from the non-reducing end β-1, 4 bonds of fibrodextrin, and then hydrolyzes into glucose.
Cellulase can be widely used in fruit and vegetable processing, juice processing, beverage, wine, soy sauce processing and so on.
