The thermal processing parameters (temperature and duration) depend on the product's composition. Both physical and chemical changes occur during processing and storage, affecting sensory properties and nutrient content. These changes are influenced by processing time/temperature, food properties, canning medium, and storage conditions.
Canning Process Overview
- Fresh produce (fruits, vegetables, meat, fish) is harvested at peak quality and transported to the canning facility
- Produce undergoes thorough washing, then preparation (peeling, trimming, coring, slicing) before can filling
- Cans are filled with appropriate liquids (brine, water, oil, syrup, or juice) and sealed airtight
- Sealed cans are cooked in specialized cookers at precise temperatures/pressures to eliminate microorganisms
- After cooling, cans are labeled and distributed to retail outlets
