Zhaoqing Zhaoshi, also known as the seed of the lotus seed, is botanistically called Euryale ferox seed and is also called chicken-head rice. It is named Zhaoshi because the Euryale ferox seeds produced in Zhaoqing are of particularly good quality. It is an annual aquatic herb belonging to the Nymphaeaceae family. Because it grows out of silt and leans against water, its leaf discs spread flat on the water surface, resembling lotus leaves, and its fruits look like chicken heads, it is commonly known as "chicken head lotus". The leaves, stems and outer skins of the fruits of the water chestnut are all covered with hard thorns, so it is also called "Water wasp".
