What is N-Acetyl Glucosamine?   

N-acetylglucosamine, with the chemical formula C8H15NO6, molecular weight 221.21, and CAS number 7512-17-6, is the basic structural unit of chitin in the exoskeleton of crustaceans. It is a white powder at room temperature with a melting point of approximately 201-204°C, readily soluble in water, and is mainly produced through fermentation of glucose by Corynebacterium glutamicum RDG-2110 and corn steep liquor powder. This substance possesses anti-inflammatory, anti-tumor, and antioxidant properties. Clinically, it is used to treat osteoarthritis and rheumatoid arthritis, enhances the function of the human immune system, inhibits cancer cell growth, and has an adjuvant therapeutic effect on cancer and malignant tumors. It is also used as a food antioxidant, an infant food additive, and a sweetener for diabetic patients.

In vivo, N-acetylglucosamine is synthesized from fructose-6-phosphate, serving as an important precursor for the synthesis of bifidus factor. It is ultimately converted to uridine diphosphate-N-acetylglucosamine, participating in the synthesis of glycosaminoglycans and proteoglycans.
