What is Vitamin B1?
Vitamin B1 (VB1) is a water-soluble vitamin and the first vitamin discovered by humans. In the body, it catalyzes the conversion of pyruvate to acetyl-CoA. Its molecular formula is C₁₂H₁₇ClN₄OS·HCl, with a relative molecular mass of 265.35, a melting point of 248℃, and a molecular weight of approximately 337.27 g/mol. It is a white crystalline or crystalline powder with a faint characteristic odor, a bitter taste, and is hygroscopic. It is readily soluble in water. It plays a role in maintaining normal carbohydrate metabolism. It is widely found in whole grains, legumes, and meats.
