  • Cakes: 3%-5% of flour amount (not exceeding 3% of total finished product)
  • Bread: 1-2% of flour amount
  • Taiwanese Moon Cakes: 5% of flour amount
  • Cantonese-style Moon Cakes: 0.3% of flour amount
  • Tide-style Moon Cakes: 5% of flour amount
