Margarine: Provides fine water dispersion, maintains smooth texture, prevents splashing and foaming during frying. Dosage: 1% of oils and fats
Cake Margarine/Shortening: Enhances stability, reduces whipping time, increases cake volume, maintains homogeneous texture, extends shelf life. Dosage: 1% of oils and fats (typically with DMG)
Shortening: Adjusts oil crystal structure and provides stable water dispersion. Dosage: 1% of oils and fats
Whipping Cream: Reduces whipping time, improves foam volume and structure, creates stiff foams, enhances mouth feel. Dosage: 0.5-1% (typically with DMG and Span60)
Cake Emulsifier: Increases cake volume, improves texture and paste stability, extends shelf life. Dosage: 5-15% of total recipe (typically with DMG, Span60 and PGE)
