Diacetyl Tartaric Acid Esters of Mono- and Diglycerides (DATEM) is an ionic emulsifier manufactured from acetic anhydride, tartaric acid, and mono- and diglycerides. This versatile food additive provides excellent emulsification properties across various food processing applications.
