The automated system processes moon cakes through multiple stages:

• Molded cakes are placed into U-shaped baking pans
• Initial baking in tunnel oven first section
• Liquid egg yolk application via brushing machine
• Second baking cycle for final texture and color
• Step-cooling tower cooling process
• Vibration-type de-panning for product removal
• Final packaging and empty pan return system

The tunnel oven system features independent temperature control across multiple zones, ensuring uniform texture and consistent coloration. The slat band conveyor design accommodates standard baking trays while maintaining optimal heat distribution.

Three application methods available for liquid egg yolk coating:

• Manual brushing for custom applications
• Automatic length and breadth brushing system
• Rotary auto-brushing for high-volume production

The step cooling tower utilizes single-pan ascent and multi-pan descent mechanisms with integrated cooling fans. The depanning system is specially designed for delicate moon cakes with thin skins and high sugar/oil content.
