Polysorbate 80, also known as Polyoxyethylene (20) Sorbitan Monooleate, consists of sorbitol, ethylene oxide, and oleic acid. It has a molecular formula of C64H124O26. At room temperature, it is in the form of pale - yellow to amber oily liquid. It is an O/W emulsifier with an HLB value of 15.0. It is soluble in water, ethanol, ethyl acetate and toluene. It’s a surfactant with numerous applications in food, pharmaceutical and cosmetics.
