Mono- and Diglycerides DH-Z80 is a high-quality food grade emulsifier composed primarily of mono- and diglycerides of stearic and palmitic acids, with a minor proportion of sodium stearate. This waxy solid emulsifier ensures excellent water dispersion stability and is widely used in baked goods, oils, and various food applications.

Applications & Usage Guidelines
Margarine Production
  • Function: Creates fine and stable water dispersion, maintains smooth texture, prevents splashing and foaming during frying
  • Dosage: 1% of oils and fats
Cake & Shortening Applications
  • Function: Enhances stability, reduces whipping time, increases cake volume, maintains homogeneous texture, extends shelf life
  • Dosage: 1% of oils and fats (typically used with DMG)
Whipping Cream
  • Function: Shortens whipping time, improves foam volume and structure, creates stiff foams, enhances mouthfeel
  • Dosage: 0.5-1% (typically used with DMG and Span60)
Bakery Products
  • Bread & Pastry: Increases volume, improves texture, extends shelf life (0.3% of flour)
  • Cake Emulsifier: Enlarges volume, improves texture and paste stability, prolongs shelf life (5-15% of total recipe)
Dairy & Frozen Products
  • Ice Cream: Improves bulging rate and shape retention, stabilizes foams (0.3-0.5% with DMG)
  • Dairy Products: Promotes fat dispersion and prevents delamination (0.2-0.5% with DMG)
Personal Care & Pharmaceutical
  • Personal Care: Used in facial creams to improve lubricating properties, stability and shape retention (5-10% of total emulsifier recipe)
  • Pharmaceutical: Acts as emulsifier and stabilizer in creams, pastes, and suppositories (10-20% in fats and oils)
