Diacetyl Tartaric Acid Esters of Mono- and Diglycerides (DATEM) is a versatile food emulsifier available in milky white wax bead form. This high-performance additive enhances texture, stability, and processing characteristics across various food applications.
Physical Properties
Appearance ranges from sticky viscous liquids to waxy solids depending on source oils. Soluble in fats, methanol, acetone, and ethyl acetate. Dispersible in water with pH 2-3 for 3% dispersions. Resistant to hydrolysis for moderate periods.
