These custom size steam cooking polyamide sausage casings are widely used in food industry applications including: steam cooking sausages, luncheon meat, mortadella, cheese, butter, condensed milk, and pet foods.
- Soaking: Casing shirred or cut pieces should be soaked in cold water for approximately 30 minutes.
- Stuffing: Casing should be stuffed tightly; 5% to 8% larger than nominal diameter. Never under stuff casing. Clip tightly to prevent slipping.
- Cooking: Steam or water cook to desired internal temperature.
- Cooling: Cool slowly using intermittent 2-minute on and 3-minute off showering cycle until internal temperature reaches 115-118°F. Alternatively, shower continuously for 20 minutes.
- Storage: Avoid placing product in direct airflow immediately after cooking. Cooling too quickly or refrigerating before proper cooling may cause wrinkles. Finished products may be frozen.
Plastic sausage casings are packaged in individual rolls or packages with carton protection against punctures and abrasions during shipping. Packaging protects from direct sunlight and extreme temperatures. Store away from food products containing oils and fats.
