Ethyl heptanoate is a colourless, transparent liquid at room temperature with a pineapple-like aroma. It is soluble in organic solvents such as ethanol but insoluble in water.
Uses:
Ethyl heptanoate possesses a pineapple-like aroma and may be employed as a floral, fruity, tobacco, or alcoholic beverage flavouring agent. It also finds application in organic synthesis. Its primary uses include the formulation of strawberry, banana, grape, cherry, apricot, peach, cream, and cheese-flavoured edible essences, as well as champagne, brandy, and rum flavourings. Usage levels are: 340mg/kg in chewing gum; 24mg/kg in baked goods; 17mg/kg in confectionery; 8.5–20mg/kg in alcoholic beverages; 7.5mg/kg in frozen desserts; 6.8mg/kg in soft drinks.
