A white, odourless, crystalline powder with a sweet taste and hygroscopic properties. Soluble in water (235 g/100 g water at 25 °C), glycerol and propylene glycol; slightly soluble in methanol, ethanol, acetic acid, phenol solutions. Practically insoluble in most other organic solvents.
Used as a humectant, flavour retainer and antioxidant in foodstuffs, and as an ingredient in cosmetics; it is also used in the manufacture of toothpaste, tobacco, leather and ink as a substitute for glycerine to control moisture content, and as a raw material for adhesives. It can be used in biochemical research, for the acid-base titration of boric acid, and in the preparation of sorbitol and vitamin C; it serves as a biochemical reagent, thickener and hardener, and can also be used to produce plasticisers and antifreeze agents in alkyd resins.
