Introduction:
A colourless liquid. It has a citrus and lemony aroma. Its boiling point is 182 °C. It is soluble in ethanol and most non-volatile oils, but insoluble in water. It oxidises readily on exposure to air. The natural form is found in coriander seed oil, lemon oil, kumquat oil and lovage oil, amongst others.
Uses:
Flavourings. Mainly used in the production of artificial lemon and mint essential oils.
