Cocoa Bean Processing Stage
  • Cleaning & Sorting: Removes foreign materials using sieves, magnets, and air classifiers
  • Roasting: Develops flavor at 120-150°C temperature range
  • Winnowing: Cracks beans and removes shells to produce cocoa nibs
Chocolate Mass Preparation
  • Grinding & Refining: Processes cocoa nibs into cocoa liquor, achieving smooth particle size of 15-25 microns
  • Conching: Kneads and aerates chocolate mass for 6-72 hours to develop flavor and improve texture
  • Tempering: Stabilizes cocoa butter crystals (Type V) for optimal shine and snap
