Improves stability and plasticity with dosage of 0.35%-1% of oils and fats. Enhances whipping strength and texture in cake applications.
Promotes emulsification of dairy fat in ice cream (0.1-0.3%), improves foam structure in whipping cream (0.4-0.8%), and prevents delamination in protein beverages (0.5-1%).
Enlarges cake volume (0.3-0.5% of flour), improves texture in bread and pastry (0.5-1% of flour), and enhances crystallization control in confections (0.3-0.5%).
