VIVID Instant Cake Emulsifier can beat up batter rapidly, shorten whipping time and increase shape stability of batter. Cake gel ( emulsifiers ) comprised of emulsifiers, which greatly improves volume through increased aeration and provides a more uniform crumb structure. It works amazing on sponge cake and many other cakes. The cake gel leaves baked cakes with a softness that can't be match.
