- Prepare hot water bath at 90°C (190°F)
- Thoroughly drain dressed poultry using appropriate draining rack
- Insert poultry head-first into the shrink bag
- Remove air by compressing bag around poultry
- Twist open end tightly and secure with tie wrap or clamp
- Puncture small hole in chest area between breasts to allow air escape
- Dip bag into heated water for 2-3 seconds for optimal shrinkage
