Applications
Widely used in the food industry for various meat products, poultry, vegan alternatives, meat analogues, cheese, butter, pet food, soups, and gravies.
Usage Instructions
Soaking
Casing shirred or cut pieces should be soaked in cold water for approximately 30 minutes.
Stuffing
Casing should be stuffed tightly; 5% to 8% larger than nominal diameter. Never under stuff casing. Clip tightly to prevent slipping.
Cooking
Steam or water cook to desired internal temperature.
Cooling
Cool slowly using intermittent 2-minute on and 3-minute off showering cycle until internal temperature reaches 115-118°F. Alternatively, shower continuously for 20 minutes.
Storage
Avoid placing product in direct airflow immediately after cooking. Prevent refrigeration before complete cooling to avoid wrinkles. Finished products may be frozen.
