Properties

The density of monosodium phosphate is 1.949g/cm3. The melting point is 60 ℃. There are anhydrous matter, monohydrate matter and dihydrate matter. The anhydrous substance is white crystalline powder, slightly hygroscopic and easily soluble in water. The anhydrous substance is colorless orthorhombic crystal, soluble in water, acidic reaction (pH = 4.5), insoluble in alcohol, slightly soluble in chloroform. Dihydrate is also easily soluble in water and caking in humid air. It dehydrates to anhydrous matter at 100 ℃, forms sodium pyrophosphate at 190-210 ℃, and decomposes to sodium metaphosphate at 280-300 ℃. The aqueous solution is acidic. At present, dihydrate is the main product. Under a certain pH value, it is prepared by the reaction of sodium carbonate with phosphoric acid or disodium hydrogen phosphate with phosphoric acid in a certain proportion, which is easy to agglomerate in wet air.

Application

Sodium dihydrogen phosphate is used as acidity regulator in brewing, dairy products and other food processing; it is used as binding agent and stabilizer in meat products, and the dosage is about 0.4%. According to the regulations of FAO / who (1984), sodium dihydrogen phosphate is used for: low concentrated milk, sweet condensed milk and cream, the dosage is 0.2% (based on anhydrous matter); cream powder and milk powder, the dosage is 0.5%; processed cheese, the dosage is 0.9% (based on P); lunch meat, cooked ham, cooked minced meat, the dosage is 0.3% (based on P2O5 alone or combined with other phosphates); instant broth and soup, the dosage is 1%; cold drink The dosage was 0.2%. In addition, the dosage in salted beef is 0.2% - 3.0%
