Properties
Disodium hydrogen phosphate is easily weathered in the air. When placed in the air at room temperature, it loses about 5 crystal waters to form heptahydrate. When heated to 100 °C, it loses all crystal water to form anhydrous, and it decomposes into coke at 250 °C. Sodium Phosphate. It is easy to be weathered in the air, and it is easy to lose five molecules of crystal water to form heptahydrate (Na2HPO4.7H2O). Soluble in water, insoluble in alcohol. The aqueous solution is slightly alkaline (the pH of the 0.1-1N solution is about 9.0). At 100 °C, it loses crystal water to form anhydrous, and at 250 °C, it decomposes into sodium pyrophosphate. The pH of 1% aqueous solution is 8.8~9.2; it is insoluble in alcohol. At 35.1 ℃, it melts and loses 5 crystal waters.

Disodium hydrogen phosphate is used as a quality improver, which can improve the complex metal ions, pH value, and ionic strength of food, thereby improving the cohesion and water holding capacity of food. my country stipulates that it can be used for condensed milk, and the maximum use amount is 0.5g/kg.
