Sodium tripolyphosphate is a kind of amorphous water-soluble linear polyphosphate with white powder crystal and good fluidity. It is commonly used in food as water retention agent, quality improver, pH regulator and metal chelator. It is quite stable at room temperature. Hydrolysis reaction will occur slowly in humid air to finally form sodium orthophosphate.

Food grade sodium tripolyphosphate is a very common food additive. It is used in aquatic products, meat and food. Production method:
