Disodium dihydrogen pyrophosphate is an inorganic substance with the chemical formula Na2H2P2O7, white crystalline powder with a relative density of 1.862, which is decomposed into sodium metaphosphate when heated to above 220°C. It is easily soluble in water, and can form chelate with Cu and Fe. The aqueous solution and dilute sulfuric acid and dilute inorganic acid are heated and hydrolyzed into phosphoric acid. The source and preparation method are obtained by heating sodium dihydrogen phosphate to 200 ° C for dehydration; or adding sodium carbonate to phosphoric acid, and then heating to 200 ° C for dehydration.
Disodium dihydrogen pyrophosphate (Na2H2P2O7) is neutralized by food-grade phosphoric acid and soda ash, and the pH value of the end point is controlled to generate sodium dihydrogen phosphate, which is then polymerized and dehydrated at a certain temperature to obtain the finished product.
In the two-step dry polymerization method, food-grade soda ash is added to the neutralizer, heated and dissolved under stirring, and then food-grade phosphoric acid is added for neutralization reaction. Filter at 80°C, evaporate the filtrate to concentrate, crystallize by cooling, centrifuge, and dry and dehydrate at 95°C to obtain anhydrous sodium dihydrogen phosphate. Then, it is sent to a box-type polymerization furnace for heating, melting and polymerization, and the temperature of the material is controlled at 140-200 °C for polymerization. The converted sodium acid pyrophosphate is pulverized and packaged to obtain edible sodium acid pyrophosphate. Its chemical formula is

Applications:
Disodium dihydrogen pyrophosphate is used as a rapid leavening agent, a water retention agent, a quality improver, and is used in baked goods such as bread, biscuits, meat, aquatic products, etc.
