Disodium hydrogen phosphate is easy to be weathered in the air. When placed in the air at normal temperature, it loses about 5 crystal water to form heptahydrate. When heated to 100 ℃, it loses all crystal water to form anhydrous substance. When heated to 250 ℃, it decomposes into sodium pyrophosphate. It is easy to be weathered in the air and lose five molecules of crystal water to form heptahydrate (na2hpo4.7h2o). Soluble in water, insoluble in alcohol. The pH of 0.1-1n solution is about 9.0. White or colorless crystalline free flowing solid, efflorescent in air, easily soluble in water, but insoluble in alcohol, its water solution is slightly alkaline, relative density at 1.52 g/cm3, melting point at 35℃
Application
Disodium hydrogen phosphate is used as baking product in food to prevent oxidation and discoloration, emulsifier in dairy products to prevent protein coagulation, and solid beverage to chelate, emulsify and buffer.
