Sodium tripolyphosphate is a white powder, easily soluble in water, the aqueous solution is alkaline, and the pH of 1% aqueous solution is 9.7. There are two crystal forms, α type (high temperature type) and β type (low temperature type). Both have the same chemical properties and can obtain the same aqueous solution and crystalline hydrate, but thermal stability, solubility, heat of hydration during dissolution and hygroscopicity All are different. It will gradually hydrolyze to orthophosphate in water. It has good coordination ability and can be complexed with metal ions such as calcium, magnesium and iron. It is also a non-organic surfactant
Properties:
Melting point: 622℃, easily soluble in water, has significant chelating ability to metal ions such as calcium and magnesium, can soften hard water, make suspension into solution, weakly alkaline, non-corrosive, it is an inorganic surfactant , It has a strong emulsification effect on lubricating oil and fat. The bulk density is usually divided into low density 0.35-0.5g/cm3, medium density 0.51-0.65g/cm3, high density 0.66-0.9g/cm3; five sodium has type I ( High temperature type) and type II (low temperature type) are two crystalline forms. The chemical properties of the two are the same. The difference is that the thermal stability and hygroscopicity of type I are higher than that of type II. At the same time, the solubility and heat of hydration during dissolution are different.
Applications:
In the food industry, it is used as a quality improver and moisture retention agent for canned food, fruit juice drinks, dairy products, soy milk, etc.; it is mainly used for the tenderization of canned ham and canned broad beans to soften the skin of soybeans. It can also be used as a softener and thickener.
