Properties
White powder or crystal. 534, melting point 880 ℃, boiling point 938 ℃. Colorless transparent crystal or white crystal powder. It is easily soluble in water, the solubility of 100g water is 6.23 at 20 ℃, and its aqueous solution is alkaline; it is insoluble in alcohol. The aqueous solution is stable below 70 ℃, and hydrolyzes to disodium hydrogen phosphate when boiling. It is weathered in dry air and loses crystal water at 100 ℃. Easy to absorb moisture in the air and deliquescence. It can form complex with alkaline earth metal ions and white silver pyrophosphate when it meets with Ag +.

Application
Tetra sodium pyrophosphate is used in the food industry as an emulsifying agent, nutrient and texturing agent in applications including: processed cheese, seafood products, hamburgers and meat. In food industry it is used as buffering agent, emulsifier, nutrition ingredients and quality improver.
