Properties
Sodium pyrophosphate is a white powder or crystal. It is easy to absorb moisture in the air and deliquescence, soluble in water, insoluble in ethanol and other organic solvents. It has strong complexation ability with Cu2 +, Fe3 +, Mn2 + and other metal ions. The aqueous solution is stable below 70 ℃, and hydrolyzes to disodium hydrogen phosphate after boiling.
Application
Tetra Sodium pyrophosphate is used in the food industry as an emulsifying agent, nutrient and texturing agent in applications including: processed cheese, seafood products, hamburgers and meat. In food industry it is used as buffering agent, emulsifier, nutrition ingredients and quality improver.
