Properties
Sodium pyrophosphate, with the chemical formula of Na4P2O7, is a kind of white crystalline powder. It is easy to absorb water in the air and deliquescence. It is soluble in water but insoluble in ethanol and other organic solvents. It has strong complexation ability with Cu2 +, Fe3 +, Mn2 + and other metal ions. The aqueous solution is stable below 70 ℃, and hydrolyzes to disodium hydrogen phosphate after boiling
Application
(1) The canned poultry such as duck four treasures, mushroom duck wings and stewed duck with mushroom are easy to release hydrogen sulfide during heating. Hydrogen sulfide reacts with iron ion in the can to form black iron sulfide, which affects the quality of finished products. Adding compound phosphate can chelate metal ions and improve the quality of finished products.
(2) Compound phosphates (60% sodium pyrophosphate and 40% sodium tripolyphosphate) were added to the pork sausage.
(3) It is widely used in surimi products abroad, with compound phosphate (sodium pyrophosphate 60%, sodium tripolyphosphate 40%).
(4) It can be used as melting agent and emulsifier of cheese. It can release calcium ions from calcium caseinate in cheese, increase the viscosity of casein, and obtain soft and extensible products. Generally, sodium pyrophosphate, orthophosphate and metaphosphate are used in combination, and the dosage is not more than 0.9% (P).
(5) When used in soy sauce and soybean paste, the dosage is about 0.005% ~ 0.3%, which can prevent the browning of soybean paste and improve the color
