Physical and chemical properties
Anhydrous sodium tripolyphosphate can be divided into high temperature type (type I) and low temperature type (type II). White crystalline or crystalline powder. The relative molecular weight is 367.86, the relative density is 2.49, and the melting point is 662 ℃. It is soluble in water (14.5g/100g at 25 ℃ and 23.25g/100g at 80 ℃). The pH of 1% aqueous solution is 9.7. In aqueous solution, it will be hydrolyzed gradually to form pyrophosphate or orthophosphate. It has complexation with alkaline earth metal and heavy metal ions and can soften water. It also has the ability of ion exchange, which can make the suspension into solution with strong dispersion. The hydrolysis rate of type I is higher than that of type II, so type II is also called slow hydrolysis type. Type II transformed into type I at 417 ℃.
The hexahydrate na5p3o10 · 6H2O is a white prismatic crystal with a relative density of 1.786. Melting point 53 ℃, soluble in water. The product can be decomposed during recrystallization. Even if sealed, it can still decompose into sodium diphosphate at room temperature. Heated to 100 ℃, it decomposes into sodium diphosphate and sodium orthophosphate. Therefore, the product can not be preserved and is now prepared and used.
Applications:
Sodium tripolyphosphate was used to marinate raw meat of ham. Every 100kg meat was marinated with 2.2kg of No.3 mixed salt (refined salt 91.65%, sugar 8%, sodium nitrite 0.35%) and 85g of sodium tripolyphosphate. The effect was good in 0 ~ 4 ℃ cold storage for 48 ~ 72h. It can soften the skin of broad bean. Many fruits and vegetables have tough skin. With the maturity of fruits and vegetables, the skin becomes more tough. Adding polyphosphate to the water for scalding or soaking in fruits and vegetables processing can complexing calcium, thus reducing the toughness of skin.
