Physical and chemical properties

Sodium pyrophosphate, with the chemical formula Na4P2O7, is a white crystalline powder, which is easy to absorb water and deliquescence in the air, soluble in water and insoluble in ethanol and other organic solvents. The complex ability of cu2+, fe3+, mn2+ and other metal ions is strong, and the water solution is stable under 70 ℃, and the boiling is hydrolyzed to disodium hydrogen phosphate.

 

Application

(1) The canned birds such as duck Sibao, duck wings and stewed duck with mushrooms can easily release hydrogen sulfide during heating. Hydrogen sulfide reacts with iron ions in the tank to produce black iron sulfide, which affects the quality of the finished product. The addition of compound phosphate has a good chelating metal ion effect, and can improve the quality of the finished product.


(2) The pork sausage can was cut and mixed with compound phosphate (60% sodium pyrophosphate and 40% sodium tripolyphosphate).


(3) It is used in surimi products abroad, and compound phosphate (sodium pyrophosphate 60%, sodium tripolyphosphate 40%).


(4) It can be used as melting agent and emulsifier of cheese, which can release calcium ions from calcium casein, increase the viscosity of casein, and obtain soft and extensional products. Generally, sodium pyrophosphate, orthophosphate and metaphosphate are used in combination, and the dosage is not more than 0.9% (P).


(5) It can prevent Brown soybean sauce and improve color by using about 0.005% - 0.3% of soy sauce

 

 

 

Preparation method


Anhydrous disodium hydrogen phosphate is prepared by drying disodium hydrogen phosphate aqueous solution, and then dehydrated and polymerized at high temperature. It can be divided into one-step method and two-step method. One step method is used to dry and polymerize in one equipment, and two-step method is used to dry and polymerize in two equipment. The equipment of one-step process is simple, the process is short, but the quality is not stable. The two-step process has the advantages of complex equipment, long process and stable product quality. The reaction equation is as follows
