Sodium dihydrogen pyrophosphate (na2h2p2o7) is neutralized by food grade phosphoric acid and soda ash, and the end-point pH value is controlled to produce sodium dihydrogen phosphate, which is then polymerized and dehydrated at a certain temperature to obtain the finished product.
Applications:
Functional water retention agent, pH regulator, metal chelator. This product is acid salt, generally not used alone. It is often mixed with sodium pyrolate (alkaline salt, which has specific effect with protein in meat and can significantly enhance the water holding capacity of meat). Saps react with sodium bicarbonate to produce carbon dioxide, which can be used as raw material for rapid fermentation powder. Z is used as food additive in China.

Properties
Disodium dihydrogen pyrophosphate is an inorganic substance with the chemical formula of na2h2p2o7. It is a white crystalline powder with a relative density of 1.862. When heated to 220 ℃, it decomposes into sodium metaphosphate. It is soluble in water and can form chelate with Cu2 + and Fe2 +. The aqueous solution is hydrolyzed with dilute sulfuric acid to form phosphoric acid. The source and preparation method are sodium dihydrogen phosphate heated to 200 ℃ and dehydrated; Or sodium carbonate is added into phosphoric acid, and then heated to 200 ℃ for dehydration.
