Applications:
Water retention agent, quality improver, pH regulator, metal chelator. According to China's hygienic standard for the use of food additives (gb2760-2011), the maximum consumption of canned food, fruit juice (fruit flavor) beverage and vegetable protein beverage is 1.0g/kg; Dairy products, poultry products, meat products, ice cream, instant noodles, the maximum use of 5.0g/kg. When compound phosphate is used, it should not exceed 1.0g/kg for canned meat products; Condensed milk should not exceed 0.50g/kg; When combined with sodium pyrophosphate and sodium phosphate, the dosage of phosphate should not exceed 5g / kg; Western style cooking and smoked ham shall comply with GB 13101-1991 "Hygienic standard for western style cooking and smoked ham", and the combined use shall not exceed 5g / kg (Western style ham can be added appropriately, and the phosphate content is 8g / kg). Other references: for canned ham, it is beneficial to the improvement of product quality under appropriate conditions, such as complete shape, good color, tender meat, easy slicing and glossy cut. Sodium tripolyphosphate was used for curing raw meat of ham. Each 100kg meat was salted with 2.2kg of No.3 mixed salt (91.65% refined salt, 8% granulated sugar, 0.35% sodium nitrite) and 85g of sodium tripolyphosphate. The effect was good when it was fully stirred and salted at 0 ~ 4 ℃ for 48 ~ 72h. It can soften the skin of broad bean. Many fruits and vegetables have tough skins, which become more tough as they mature. Adding polyphosphate in scalding or soaking water for fruit and vegetable processing can complex calcium and reduce the toughness of skin.
