Applications:
Disodium dihydrogen pyrophosphate is used as functional water retention agent, pH regulator and metal chelator. This product is acid salt, generally not used alone. It is often mixed with sodium pyrolate (alkaline salt, which has specific effect with protein in meat and can significantly enhance the water holding capacity of meat). The product reacts with sodium bicarbonate to produce carbon dioxide, which can be used as the raw material of fast fermentation powder. It can be used as food additive.
