Physical and chemical properties
White powdery or crystalline. The relative density is 2.534 and the melting point is 980 ℃. Colorless transparent crystal or white crystal powder. The solubility of 100g water is 6.23g at 20 ℃, and the solution is alkaline; It is insoluble in alcohol. The aqueous solution is stable below 70 ℃, and hydrolyzes to disodium hydrogen phosphate when boiling. Easy to absorb moisture in the air and deliquescence. It can form complexes with alkaline earth metal ions; When it meets with Ag +, it forms white silver pyrophosphate.
It can react with metal ions. The pH value of 1% aqueous solution is 10.0-10.2. It has the general properties of common polyphosphate, such as emulsifying, dispersing, preventing fat oxidation, improving protein binding, and inhibiting food oxidation and fermentation at high pH value
Application
For lunch meat, sausage and other canned meat, it can improve the water holding capacity of meat products, reduce the loss of nutrients, improve the tenderness of meat, and improve the quality of finished products; As a melting agent of drying agent, emulsifier can release calcium from calcium caseinate in cheese, increase the viscosity of casein, and obtain soft and extensible products. For soy sauce and soybean paste processing, it can prevent browning, improve color, inhibit rancidity and fermentation of soybean milk; It can be used in juice, cool drink and cold drink processing to prevent oxidation and precipitation during storage; When used in ice cream processing, it has the effect of increasing its volume and emulsifying and dispersing.
Preparation method
Anhydrous disodium hydrogen phosphate is prepared by drying disodium hydrogen phosphate aqueous solution, and then dehydrated and polymerized at high temperature. It can be divided into one-step method and two-step method. One step method is used to dry and polymerize in one equipment, and two-step method is used to dry and polymerize in two equipment. The equipment of one-step process is simple, the process is short, but the quality is not stable.
