Properties
Sodium phosphate is colorless or white crystal, containing 1-12 molecules of crystal water, odorless. When heated above 212 ℃, it becomes anhydrous. It is soluble in water (28.3g/100ml), insoluble in ethanol and carbon disulfide.
Application:
It plays a role in improving the quality of food processing, such as maintaining the water holding capacity of meat and enhancing the bonding strength in meat products, so as to reduce the loss of nutrients in meat and preserve the tenderness of meat. It is also used as emulsifier, nutritional supplement and quality improver in food processing. It is a raw material for preparing alkaline water for pasta, and also used for sugar refining and processing α- The manufacture of starch. It can also be used as detergent for food bottles and cans.
Trisodium phosphate, as a quality improver, can improve the complexing metal ions, pH value and ionic strength of food, so as to improve the adhesion and water holding capacity of food. Preparation method
