Properties
Disodium dihydrogen pyrophosphate is an inorganic substance with the chemical formula na2h2p2o7. It is a white crystalline powder with a relative density of 1.862. It is decomposed into sodium metaphosphate when heated above 220 ℃. It is easily soluble in water and can form chelates with Cu2 + and Fe2 +, and the aqueous solution is hydrolyzed with dilute sulfuric acid and dilute inorganic acid to phosphoric acid.
Applications:
Functional water retention agent, pH regulator, metal chelating agent. This product is an acid salt and is generally not used alone. It is often mixed with sodium pyroate (alkaline salt, which has a specific effect with protein in meat and can significantly enhance the water holding capacity of meat). This product reacts with sodium bicarbonate to produce carbon dioxide, which can be used as raw material for rapid fermentation powder.
