Properties:
 

Potassium pyrophosphate is an inorganic substance with molecular formula of k4p2o7 and molecular weight of 330.33. It is white powder or block, soluble in water and insoluble in ethanol. The aqueous solution is alkaline. At 25 ℃, the solubility of 100g water is 187G.
 

 
Application:
 
It is used as emulsifier, tissue modifier and chelating agent in food industry. It is also used as raw material of alkaline water for flour products. It is often used with other condensed phosphates to prevent guano stone from being produced in canned aquatic products and discoloration of canned fruits; Improve the expansion of ice cream, the yield of ham and sausage, and the water holding capacity of ground fish; Improve noodle taste and yield, prevent cheese aging, etc.
 
TKP 98% Min Tripotassium Phosphate
Production method:
 
Put 203 kg of potassium hydroxide into the dissolution tank and add water to prepare 48% potassium hydroxide aqueous solution. Put it into the reactor and slowly add 85% phosphoric acid under stirring for salt forming reaction. When phosphoric acid is added dropwise to 100 kg, take 1 drop of material solution, add it to the white porcelain plate, add 1 drop of water for dilution, and measure the pH value with precision test paper. If the pH value reaches 8.5 ~ 9.0, stop dropping phosphoric acid. Continue stirring for 0.5 h, stand and filter to remove impurities. The filtrate is transferred to the evaporation pot for concentration, and then transferred to the coking furnace in glue dry state for coking treatment at 550 ~ 650 ℃. After coking for 2 ~ 3 hours, sample and measure the end point (check with 1% silver nitrate solution until there is no yellow silver orthophosphate). After the reaction, it is cooled and crystallized to obtain the finished product.
